Job Description

As Head Chef – Japanese Cuisine at The Lab Holding ,you will lead the kitchen’s vision, consistency, and innovation. You’ll oversee all culinary operations, drive menu development rooted in authentic Japanese techniques, and mentor high-performing kitchen teams while delivering exceptional dining experiences.

What You’ll Do

Culinary Leadership

•⁠  ⁠Lead and manage all kitchen operations across the outlet
•⁠  ⁠Ensure authenticity, consistency, and excellence in Japanese cuisine
•⁠  ⁠Set culinary standards for quality, presentation, and flavor
•⁠  ⁠Collaborate closely with senior management on culinary strategy

Menu Development & Creativity

•⁠  ⁠Design and evolve menus inspired by traditional and modern Japanese cuisine
•⁠  ⁠Work with seasonal and premium ingredients
•⁠  ⁠Develop signature dishes that reflect brand identity
•⁠  ⁠Maintain portion control and recipe standardization

Team Management & Training

•⁠  ⁠Recruit, train, and mentor kitchen teams
•⁠  ⁠Build a strong culture of discipline, respect, and excellence
•⁠  ⁠Manage scheduling, performance, and team development
•⁠  ⁠Support Sous Chefs and Chef de Parties in daily operations

Operations & Cost Control

•⁠  ⁠Oversee food safety, hygiene, and HACCP compliance
•⁠  ⁠Manage food costs, inventory, and supplier coordination
•⁠  ⁠Minimize waste and maximize kitchen efficiency
•⁠  ⁠Ensure smooth service during high-volume periods

Who You’ll Lead With

You’ll work alongside a diverse, passionate culinary team that values precision, creativity, and continuous improvement. Our kitchens combine respect for tradition with modern innovation.

What We’re Looking For

Experience

•⁠  ⁠Proven experience as Head Chef or Senior Sous Chef in Japanese cuisine
•⁠  ⁠Strong background in authentic Japanese kitchens (sushi, robata, izakaya, or kaiseki experience preferred)
•⁠  ⁠Experience in high-end or high-volume restaurant concepts

Skills

•⁠  ⁠Expert knowledge of Japanese cooking techniques and ingredients
•⁠  ⁠Strong leadership, planning, and communication skills
•⁠  ⁠Cost control, menu engineering, and operational management
